Ingredients

  • 2 lbs chicken thighs, cut into chunks
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 1 cup natural peanut butter
  • 2 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the onions, garlic, and ginger until fragrant.
