Ingredients

  • 1 block of feta cheese
  • 2 cups cherry tomatoes
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 8 oz pasta of choice
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the block of feta cheese in the center of a baking dish and surround it with cherry tomatoes.
  3. Drizzle olive oil over the cheese and tomatoes, then sprinkle with garlic, red pepper flakes, salt, and pepper.
  4. Bake for 25-30 minutes, or until the tomatoes are bursting and the feta is soft.
  5. Meanwhile, cook the pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
  6. Remove the baking dish from the oven and use a fork to mash the feta and tomatoes into a creamy sauce.
  7. Toss the cooked pasta with the sauce, adding reserved pasta water if needed for consistency.
  8. Garnish with fresh basil leaves and serve immediately.
