Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1 1/2 cups almond flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, whisk together cottage cheese, eggs, honey, and vanilla extract.
  3. Add almond flour, baking powder, and cinnamon. Mix until combined.
  4. Fold in the fresh blueberries gently.
  5. Scoop the batter into the muffin liners, filling them about 3/4 full.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
