Ingredients

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 1 lb baby potatoes, halved
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat 1 tbsp olive oil in a large skillet over medium heat.
  2. Add the halved baby potatoes, season with salt, pepper, thyme, and rosemary.
  3. Cook for 10-12 minutes, stirring occasionally, until golden brown and tender. Remove and set aside.
  4. In the same skillet, add the remaining olive oil and 1 tbsp butter.
  5. Add the steak bites, season with salt, pepper, and paprika, and cook for 2-3 minutes per side until browned.
  6. Add minced garlic and remaining butter to the skillet and toss the steak bites for another minute.
  7. Return the potatoes to the skillet, sprinkle with fresh parsley, and mix well.
  8. Serve immediately and enjoy!
