Pour the cream cheese mixture over the crust.
In another bowl, mix diced apples, cinnamon, and brown sugar. Spread evenly over the cheesecake layer.
Drizzle caramel sauce on top.
Bake for 35-40 minutes or until set.
Let cool completely before cutting into bars. Serve with extra caramel drizzle if desired.
