Ingredients
1 small head cauliflower, cut into bite-sized florets
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and pepper, to taste
8 small corn tortillas
1/2 cup shredded red cabbage
1/4 cup chopped fresh cilantro
1/2 avocado, sliced
1/4 cup crumbled vegan feta (optional)
For the Cilantro Lime Crema
1/2 cup unsweetened coconut yogurt
1 tablespoon lime juice
1/2 teaspoon lime zest
1/4 cup fresh cilantro, chopped
1/2 teaspoon garlic powder
Salt, to taste
Instructions
For the Cauliflower
Preheat oven to 400°F (200°C).
In a large bowl, toss cauliflower florets with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
Spread the seasoned cauliflower on a baking sheet lined with parchment paper.
Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy.
For the Cilantro Lime Crema
In a small bowl, mix coconut yogurt, lime juice, lime zest, cilantro, garlic powder, and salt until well combined.
Refrigerate until ready to serve.
Assembling the Tacos
Warm corn tortillas in a dry pan over medium heat for about 30 seconds per side.
Divide roasted cauliflower among the tortillas.
Top with shredded red cabbage, avocado slices, and crumbled vegan feta (if using).
Drizzle with cilantro lime crema and garnish with fresh cilantro.
Serve immediately and enjoy!
