Ingredients

  • 2 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with non-stick cooking spray.
  2. In a mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, green onions, salt, and pepper.
  3. Spoon the mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
  4. Bake for 20-25 minutes or until the tops are golden brown and the potato cups are set.
  5. Allow to cool slightly before removing from the tin. Serve warm.
