Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound chicken breast, sliced thinly
  • 2 cups broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 2 tablespoons soy sauce (gluten-free option)
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • 1 package rice noodles or gluten-free lo mein noodles

Instructions

  1. Cook the rice noodles according to the package instructions, then set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add chicken slices and cook until browned and fully cooked. Remove from the skillet and set aside.
  4. In the same skillet, add broccoli, bell peppers, and carrots. Stir-fry until tender-crisp.
  5. Return the chicken to the skillet. Add soy sauce, oyster sauce, sesame oil, garlic, and ginger.
  6. Toss the mixture until well combined and heated through.
  7. Add the cooked noodles and toss everything together. Adjust seasoning with salt and pepper.
  8. Serve immediately and enjoy!
