Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 cup fresh cranberries
  • 1/4 cup balsamic vinegar
  • 3 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh rosemary for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix balsamic vinegar, maple syrup, olive oil, garlic, salt, and pepper.
  3. Place chicken thighs in a baking dish and pour the balsamic mixture over them.
  4. Scatter cranberries around the chicken.
  5. Roast for 35-40 minutes, basting with pan juices halfway through cooking.
  6. Garnish with fresh rosemary before serving.
