In a large pot, heat olive oil over medium heat. Add onion, bell pepper, and celery, and sauté until softened.
Add minced garlic and cook for another minute until fragrant.
Stir in shredded chicken, Cajun seasoning, smoked paprika, salt, black pepper, and cayenne pepper.
Pour in the chicken broth and diced tomatoes. Bring to a simmer and let cook for 10 minutes.
Reduce heat and stir in heavy cream, corn, and cooked rice if using. Simmer for an additional 5 minutes.
Garnish with fresh parsley and serve hot.
