Heat olive oil in a large skillet over medium-high heat.
Add chicken slices and cook until golden brown on both sides. Remove and set aside.
In the same skillet, melt butter and sauté garlic until fragrant.
Add mushrooms and cook until tender.
Pour in heavy cream and chicken broth. Stir in Italian seasoning, salt, and pepper.
Bring to a simmer, then add spinach and Parmesan cheese.
Return chicken to the skillet and cook for another 5 minutes until the sauce thickens.
Serve warm with your favorite side dish.
