In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
In the same pot, sauté the onion and garlic until fragrant.
Add the potatoes, chicken broth, and Italian seasoning. Bring to a boil, then reduce heat and simmer until potatoes are tender.
Stir in the cooked sausage and heavy cream. Simmer for another 5-10 minutes.
Season with salt and pepper to taste. Serve hot, garnished with parsley if desired.
