Ingredients

  • 2 chicken breasts, cut into strips
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1/2 cup soy sauce
  • 2 tablespoons honey
  • 1 teaspoon minced garlic
  • 1 teaspoon ginger, grated
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • Salt and pepper to taste

Instructions

  1. Place chicken strips, bell pepper, onion, broccoli, and snap peas into the crockpot.
  2. In a small bowl, mix soy sauce, honey, garlic, ginger, cornstarch, and water to create the stir-fry sauce.
  3. Pour the sauce over the ingredients in the crockpot and stir to coat evenly.
  4. Cook on low for 4-5 hours or on high for 2-3 hours until the chicken is tender and the vegetables are cooked through.
  5. Serve hot over steamed rice or noodles.
