Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the vegetables with olive oil, Italian seasoning, salt, and pepper.
  3. Place the chicken breasts on a baking sheet and arrange the seasoned vegetables around them.
  4. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  5. Remove from the oven and sprinkle with Parmesan cheese before serving.
