Ingredients

  • 1 block feta cheese (about 7 ounces)
  • 2 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 teaspoon red pepper flakes
  • 12 ounces pasta of choice
  • 1 cup cooked and shredded chicken
  • 1/4 cup fresh basil, chopped
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place the feta block in the center of a baking dish and surround it with cherry tomatoes.
  3. Drizzle with olive oil, sprinkle with garlic, red pepper flakes, salt, and black pepper.
  4. Bake for 25-30 minutes, until tomatoes burst and feta is soft.
  5. Meanwhile, cook pasta according to package instructions; reserve 1/2 cup pasta water.
  6. Remove dish from oven and mash the feta and tomatoes together to form a creamy sauce.
  7. Stir in shredded chicken and cooked pasta, adding reserved pasta water if needed.
  8. Top with fresh basil and serve warm.
