In a small bowl, mix soy sauce, cornstarch, garlic powder, and ginger powder. Set aside.
Heat olive oil in a large skillet over medium heat.
Add chicken slices and cook until lightly browned. Remove and set aside.
In the same skillet, sauté onions and bell peppers until tender-crisp.
Return the chicken to the skillet and pour the sauce mixture over it. Cook for another 3-5 minutes, stirring frequently.
Serve the stir fry hot over white rice or noodles.
