Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 lb ground beef or turkey
  • 1 cup enchilada sauce
  • 1/2 cup sour cream
  • 1 cup shredded cheese
  • 1/2 cup diced onions
  • 1/2 cup diced green peppers
  • 1 cup canned black beans (drained and rinsed)
  • 1 cup corn kernels (frozen or canned)
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, diced avocado, or sliced jalapeños

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet, brown ground beef or turkey over medium heat. Drain excess fat.
  3. Add diced onions and green peppers to the skillet. Sauté until softened.
  4. Stir in enchilada sauce, sour cream, black beans, corn, and cooked pasta.
  5. Simmer for 5 minutes, stirring occasionally, until well combined and heated through.
  6. Top with shredded cheese and cover with a lid. Let it sit until the cheese is melted.
  7. Serve warm with optional toppings like chopped cilantro or diced avocado.
