Ingredients

  • 1 lb ground chicken
  • 2 tablespoons vegetable oil
  • 1 small onion, finely chopped
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 3 cups cooked rice (preferably day-old)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 eggs, beaten
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. Heat 1 tablespoon of oil in a large skillet or wok over medium heat. Add ground chicken and cook until browned and cooked through. Remove and set aside.
  2. Add remaining oil to the skillet. Sauté onion and garlic until fragrant.
  3. Stir in frozen mixed vegetables and cook for 2-3 minutes.
  4. Push vegetables to one side and pour beaten eggs on the other side. Scramble until fully cooked.
  5. Add cooked rice and stir everything together. Return cooked chicken to the skillet.
  6. Drizzle in soy sauce and oyster sauce. Mix well and cook for another 2-3 minutes until heated through.
  7. Season with salt and pepper. Garnish with chopped green onions before serving.
