Ingredients

  • 1 lb ground turkey
  • 2 medium zucchinis, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup shredded mozzarella (optional)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until fragrant.
  3. Stir in the ground turkey, breaking it apart with a spatula, and cook until browned.
  4. Add diced zucchini, diced tomatoes, paprika, chili powder, oregano, salt, and pepper.
  5. Cook for about 10 minutes, stirring occasionally, until zucchini is tender.
  6. If using cheese, sprinkle mozzarella on top and cover for 2 minutes until melted.
  7. Garnish with fresh parsley and serve warm.
