Stir in the ground turkey, breaking it apart with a spatula, and cook until browned.
Add diced zucchini, diced tomatoes, paprika, chili powder, oregano, salt, and pepper.
Cook for about 10 minutes, stirring occasionally, until zucchini is tender.
If using cheese, sprinkle mozzarella on top and cover for 2 minutes until melted.
Garnish with fresh parsley and serve warm.
