Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can diced tomatoes (14 oz)
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup green onions, chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces and cook until browned on all sides. Remove and set aside.
  3. In the same skillet, sauté onion, garlic, and bell pepper until softened.
  4. Stir in rice, chicken broth, diced tomatoes, Cajun seasoning, smoked paprika, salt, and pepper.
  5. Return chicken to the skillet, cover, and simmer on low heat for 20-25 minutes, or until rice is cooked.
  6. Stir in green onions and parsley before serving.
