Heat olive oil in a large skillet over medium heat.
Add chicken pieces and cook until browned on all sides. Remove and set aside.
In the same skillet, sauté onion, garlic, and bell pepper until softened.
Stir in rice, chicken broth, diced tomatoes, Cajun seasoning, smoked paprika, salt, and pepper.
Return chicken to the skillet, cover, and simmer on low heat for 20-25 minutes, or until rice is cooked.
Stir in green onions and parsley before serving.
