Ingredients

  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 6 cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (optional)
  • 1 cup sliced mushrooms
  • 2 cups baby bok choy, chopped
  • 12-15 frozen potstickers
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. Heat sesame oil in a large pot over medium heat.
  2. Add garlic and ginger, sautéing until fragrant (about 1 minute).
  3. Pour in the broth, soy sauce, rice vinegar, and sriracha (if using).
  4. Bring to a gentle simmer and add mushrooms. Cook for 5 minutes.
  5. Add bok choy and frozen potstickers, simmering until potstickers are cooked through (about 5-7 minutes).
  6. Serve hot, garnished with green onions and sesame seeds.
