Ingredients

  • 12 oz bowtie pasta
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup marinara sauce
  • 1/2 cup dairy-free ricotta
  • 1/2 cup dairy-free mozzarella, shredded
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Cook the pasta according to package instructions, then drain and set aside.
  3. In a pan, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
  4. Stir in marinara sauce, oregano, basil, salt, and pepper. Simmer for 5 minutes.
  5. In a large bowl, combine cooked pasta with sauce mixture. Stir in dairy-free ricotta.
  6. Transfer mixture to the prepared baking dish. Sprinkle dairy-free mozzarella on top.
  7. Bake for 20 minutes, or until cheese is melted and bubbly.
  8. Remove from oven, garnish with fresh parsley, and serve warm.
