Preheat oven to 375°F (190°C). Grease a baking dish.
Cook the pasta according to package instructions, then drain and set aside.
In a pan, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
Stir in marinara sauce, oregano, basil, salt, and pepper. Simmer for 5 minutes.
In a large bowl, combine cooked pasta with sauce mixture. Stir in dairy-free ricotta.
Transfer mixture to the prepared baking dish. Sprinkle dairy-free mozzarella on top.
Bake for 20 minutes, or until cheese is melted and bubbly.
Remove from oven, garnish with fresh parsley, and serve warm.
