Ingredients

  • 1 lb shrimp, peeled and deveined
  • 12 oz smoked sausage, sliced
  • 2 cups cooked white rice
  • 1 bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 2 cups chicken broth
  • 2 green onions, chopped
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced smoked sausage and cook until browned, about 4-5 minutes.
  3. Add the chopped onion, bell pepper, and garlic. Sauté until softened, about 3 minutes.
  4. Stir in the shrimp and cook until pink and opaque, about 2-3 minutes.
  5. Add the Cajun seasoning, paprika, salt, black pepper, and cayenne (if using). Stir to coat.
  6. Pour in the chicken broth and bring to a simmer.
  7. Stir in the cooked rice and mix well to combine.
  8. Cook for another 3-5 minutes until everything is well incorporated and heated through.
  9. Garnish with chopped green onions and fresh parsley before serving.
