Ingredients

  • 8 oz (225g) udon noodles
  • 1 tbsp vegetable oil
  • 1/2 lb (225g) chicken breast, thinly sliced
  • 1/2 onion, sliced
  • 1/2 cup carrots, julienned
  • 1/2 cup bell pepper, sliced
  • 1/2 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp mirin
  • 1/2 tsp sugar
  • 1/4 tsp black pepper
  • 1/2 cup green onions, chopped
  • 1 tbsp sesame seeds
  • 1/2 tsp chili flakes (optional)

Instructions

  1. Cook the udon noodles according to the package instructions, then drain and set aside.
  2. Heat vegetable oil in a large pan over medium-high heat.
  3. Add chicken slices and cook until golden brown, about 3-4 minutes.
  4. Toss in the onion, carrots, bell pepper, mushrooms, and garlic. Stir-fry for 3 minutes until slightly softened.
  5. In a small bowl, mix soy sauce, oyster sauce, mirin, sugar, and black pepper.
  6. Add the cooked udon noodles to the pan and pour the sauce over the top.
  7. Stir-fry everything together for another 2-3 minutes until well combined.
  8. Garnish with chopped green onions, sesame seeds, and chili flakes if desired. Serve hot!
