Ingredients

  • 2 lbs boneless chicken breasts, cut into chunks
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 red onion, chopped
  • 1 zucchini, sliced
  • 1 cup pineapple chunks
  • 1/4 cup olive oil
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk together olive oil, soy sauce, honey, garlic, paprika, salt, and pepper.
  2. Add chicken chunks to the marinade, cover, and refrigerate for at least 30 minutes or overnight.
  3. Preheat the grill to medium-high heat and lightly oil the grates.
  4. Thread chicken, bell peppers, onion, zucchini, and pineapple onto skewers, alternating ingredients.
  5. Grill kabobs for 12-15 minutes, turning occasionally, until the chicken is fully cooked and slightly charred.
  6. Serve immediately with your favorite sides.
