Heat olive oil in a large skillet over medium heat.
Add the onion and garlic, cooking until fragrant and translucent.
Stir in the ground beef and cook until browned. Drain excess grease if necessary.
Add the diced potatoes, smoked paprika, salt, and pepper.
Pour in the beef broth, cover, and simmer for 15–20 minutes until potatoes are tender.
Remove the lid and cook for another 5 minutes to evaporate any remaining liquid.
Garnish with fresh parsley before serving.
