Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 2 1/3 cups mashed bananas
  • 1/2 cup crushed pineapple, drained
  • 1/4 cup shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, cream the butter and brown sugar. Add the eggs and mashed bananas, mixing well.
  4. Stir in the crushed pineapple and shredded coconut.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
