Ingredients

  • 2 skinless, boneless chicken breasts, cut into bite-sized pieces
  • 1/2 cup whole wheat breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large egg whites, lightly beaten
  • Cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
  2. In a shallow dish, mix together the breadcrumbs, Parmesan cheese, paprika, garlic powder, onion powder, salt, and pepper.
  3. Place the egg whites in another shallow dish.
  4. Dip each piece of chicken into the egg whites, then coat with the breadcrumb mixture, pressing gently to adhere.
  5. Arrange the coated chicken pieces on the prepared baking sheet in a single layer.
  6. Lightly spray the tops of the chicken with cooking spray.
  7. Bake for 20-25 minutes, turning halfway through, until golden brown and cooked through.
  8. Serve warm with your favorite dipping sauce.
