Heat olive oil in a large skillet over medium heat.
Add the cubed chicken and cook until browned and fully cooked, about 5-7 minutes.
Remove the chicken from the skillet and set aside.
In the same skillet, add the garlic and sauté for 1 minute until fragrant.
Add the bell pepper, zucchini, and broccoli, cooking for 5-7 minutes until tender.
Return the chicken to the skillet and stir in paprika, soy sauce (if using), salt, and pepper.
Cook for an additional 2-3 minutes, stirring to combine flavors.
Serve warm.
