Ingredients

  • 2 chicken breasts, diced
  • 2 cups cooked quinoa or rice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/2 cup tzatziki sauce
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season diced chicken with garlic powder, oregano, salt, and pepper.
  3. Cook the chicken for 6-8 minutes until fully cooked and golden brown.
  4. Prepare the bowls by layering cooked quinoa or rice, chicken, cucumber, cherry tomatoes, red onion, and feta cheese.
  5. Drizzle with tzatziki sauce and serve immediately.
