Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
Divide the dough into 8 pieces. Roll each piece into a ball and flatten into a 1/4-inch-thick round.
Preheat a skillet over medium heat. Cook each pita for 2-3 minutes on each side until puffed and golden.
