Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 cup kimchi, chopped
  • 2 tablespoons kimchi juice
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons gochujang (Korean chili paste)
  • 1/2 cup chopped green onions
  • 1/2 cup diced spam or cooked chicken (optional)
  • 1 egg (for frying, optional)
  • Sesame seeds for garnish

Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add chopped kimchi and sauté for 2-3 minutes until fragrant.
  3. Stir in kimchi juice, gochujang, and soy sauce, mixing well.
  4. Add the cooked rice and stir-fry until evenly coated with the sauce.
  5. If using, add diced spam or chicken and mix well.
  6. Push the rice to one side of the skillet and crack an egg on the other side, frying it to your preference.
  7. Serve hot, garnished with green onions and sesame seeds.
