Ingredients

For the Tofu

  • 1 block firm tofu, pressed and cubed
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder

For the Sauce

  • 1 cup full-fat coconut milk
  • 1/2 cup vegetable broth
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tablespoon nutritional yeast
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

For the Gnocchi

  • 1 package (16 oz) gnocchi
  • Fresh parsley, for garnish

Instructions

For the Tofu

  1. In a mixing bowl, toss the cubed tofu with olive oil, soy sauce, smoked paprika, and garlic powder.
  2. Heat a skillet over medium heat and sauté the tofu until crispy and golden. Set aside.

For the Sauce

  1. In the same skillet, combine coconut milk, vegetable broth, sun-dried tomatoes, nutritional yeast, and Italian seasoning.
  2. Simmer over low heat until thickened, about 10 minutes. Season with salt and pepper to taste.

For the Gnocchi

  1. Cook the gnocchi according to package instructions. Drain and set aside.
  2. Add the cooked gnocchi and tofu to the skillet with the sauce, stirring to coat evenly.
  3. Garnish with fresh parsley and serve warm.
