Ingredients

  • 1 cup graham cracker crumbs
  • 2 tbsp granulated sugar
  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup fresh lemon juice
  • 1 cup whipped topping

Instructions

  1. Mix graham cracker crumbs, sugar, and melted butter until combined. Press into the bottoms of muffin liners.
  2. In a bowl, beat cream cheese, sugar, and vanilla until smooth. Add lemon juice and mix well.
  3. Gently fold in whipped topping until combined.
  4. Spoon the mixture onto the crusts and smooth the tops.
  5. Chill in the refrigerator for at least 2 hours or until firm.
