Ingredients

  • 2 cups pecans, finely chopped
  • 1 cup graham cracker crumbs
  • 1 cup powdered sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup maple syrup
  • 1/4 cup melted butter
  • 12 oz chocolate chips, melted
  • 1 tablespoon coconut oil (optional, for smooth chocolate)

Instructions

  1. In a mixing bowl, combine chopped pecans, graham cracker crumbs, powdered sugar, brown sugar, and salt.
  2. Add vanilla extract, maple syrup, and melted butter. Mix until well combined and dough-like.
  3. Roll the mixture into 1-inch balls and place them on a parchment-lined tray.
  4. Freeze for about 30 minutes until firm.
  5. Melt chocolate chips with coconut oil (if using) in a microwave or double boiler until smooth.
  6. Dip each pecan ball into melted chocolate, coating evenly. Let excess chocolate drip off.
  7. Place the coated balls back on the tray and refrigerate until the chocolate is set.
