Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, lemon juice, and soy sauce.
Add the chicken cubes to the bowl and coat them well with the marinade. Let it sit for 15 minutes.
Thread the marinated chicken, bell peppers, and onions onto the skewers alternately.
Place the skewers on the prepared baking sheet and bake for 20-25 minutes, turning halfway through.
