Ingredients

  • 4 cups chicken broth
  • 1/2 cup pastina (small pasta)
  • 1 egg, beaten
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Bring the chicken broth to a boil in a medium saucepan.
  2. Add the pastina and cook according to the package instructions, about 6-7 minutes.
  3. Lower the heat and slowly stir in the beaten egg, allowing it to cook in ribbons.
  4. Stir in Parmesan cheese, then season with salt and pepper to taste.
  5. Serve hot, garnished with fresh parsley.
