Heat oil in a large skillet or wok over medium heat.
Add chicken pieces and cook until browned and cooked through. Remove and set aside.
In the same skillet, sauté onion, bell pepper, and garlic until fragrant and slightly softened.
Add pineapple chunks and return the chicken to the skillet.
In a small bowl, mix soy sauce, honey, and the cornstarch slurry.
Pour the sauce over the chicken and vegetables. Stir well and cook until the sauce thickens.
Serve over cooked rice and enjoy!
