Heat sesame oil in a large skillet over medium heat.
Add chicken strips and cook until fully cooked, about 5-7 minutes.
Remove chicken from skillet and set aside.
In the same skillet, sauté garlic and ginger until fragrant.
Add bell peppers and onion, cooking until tender-crisp.
Return chicken to the skillet and stir in soy sauce.
Season with salt and pepper to taste and stir until well combined.
Serve hot over cooked rice or noodles.
