Ingredients

  • 1 lb ground beef (80/20)
  • 1 large onion, thinly sliced
  • 8 slices rye bread
  • 8 slices American cheese (or cheddar)
  • Butter for spreading on bread
  • Salt and pepper to taste

For the Secret Sauce

  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp finely chopped pickles or relish
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika

Instructions

  1. In a skillet over medium heat, melt a little butter and sauté the sliced onions until caramelized (about 15–20 minutes). Set aside.
  2. In a bowl, season the ground beef with salt and pepper. Divide into 4 thin patties, slightly larger than your bread slices.
  3. Cook patties in a skillet over medium-high heat until browned and cooked through. Set aside.
  4. In a small bowl, whisk together all ingredients for the secret sauce. Set aside.
  5. Spread butter on one side of each slice of bread. On the unbuttered side, layer cheese, a beef patty, caramelized onions, a spoonful of sauce, more cheese, and another slice of bread (buttered side out).
  6. Grill each sandwich in a skillet over medium heat until the bread is golden and the cheese is melted, flipping once. Serve hot!
