Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground paprika
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 4 pita breads
  • 1/2 cup tzatziki sauce
  • 1 cup sliced tomatoes
  • 1 cup shredded lettuce
  • 1/4 cup sliced red onion

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, combine olive oil, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, salt, and pepper.
  3. Coat the chicken thighs in the spice mixture and place them on a baking sheet.
  4. Roast the chicken in the oven for 25-30 minutes or until fully cooked.
  5. Let the chicken rest for 5 minutes, then slice thinly.
