Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 1 lemon, sliced
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with a paper towel.
  3. In a bowl, mix olive oil, garlic, oregano, thyme, paprika, salt, and pepper.
  4. Rub the mixture evenly over the chicken thighs.
  5. Arrange the chicken in a baking dish, placing lemon slices on top.
  6. Roast in the oven for 35-40 minutes until golden and crispy.
