Ingredients

  • 1 block firm tofu, pressed and cubed
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame seeds
  • 2 green onions, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix soy sauce, sesame oil, maple syrup, garlic powder, and ginger powder.
  3. Toss the tofu cubes with cornstarch, then coat with half of the sauce mixture.
  4. Spread tofu on one side of the baking sheet and bake for 15 minutes.
  5. Meanwhile, toss broccoli, bell pepper, and carrots with the remaining sauce.
  6. Add the vegetables to the baking sheet and bake for another 15 minutes.
  7. Sprinkle with sesame seeds and green onions before serving. Enjoy!
