Ingredients

For the Chili

  • 1 Tbsp olive oil
  • 1 lb ground beef
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 14-oz can crushed tomatoes
  • 1 14-oz can kidney beans, drained and rinsed
  • 1 14-oz can pinto beans, drained and rinsed
  • 1 cup beef stock or water
  • 2 Tbsp chili powder
  • 1 tsp cumin
  • Salt and black pepper to taste

For the Cornmeal Biscuits

  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 6 Tbsp cold butter, cubed
  • 1/2 cup buttermilk

Instructions

For the Chili

  1. Preheat the oven to 425°F.
  2. In a large ovenproof skillet, heat olive oil over medium heat.
  3. Add ground beef and cook until browned.
  4. Add onion, bell pepper, and garlic, and cook until softened.
  5. Stir in tomatoes, beans, beef stock, chili powder, cumin, salt, and pepper.
  6. Simmer for about 15 minutes, allowing flavors to develop.

For the Cornmeal Biscuits

  1. In a mixing bowl, whisk together flour, cornmeal, baking powder, and salt.
  2. Cut in butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Stir in buttermilk until just combined.
  4. Drop spoonfuls of biscuit dough over the top of the chili.

Bake

  1. Transfer the skillet to the oven and bake for 20-25 minutes, until biscuits are golden and cooked through.
