Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup shredded mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • Optional: Red pepper flakes for extra spice

Instructions

  1. Heat olive oil in a pan over medium heat and sauté spinach until wilted.
  2. In a bowl, mix sautéed spinach with feta, mozzarella, garlic powder, oregano, and black pepper.
  3. Lay out a tortilla and spread half of the mixture evenly over one side.
  4. Fold the tortilla in half and place it in a skillet over medium heat.
  5. Cook for 2-3 minutes on each side until golden brown and crispy.
  6. Repeat with the remaining tortillas.
  7. Slice and serve warm with your favorite dipping sauce.
