Ingredients

  • 2 cups mashed sweet potato (about 2 medium sweet potatoes)
  • 1/2 cup almond butter
  • 1/3 cup maple syrup
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup oat flour
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1/3 cup dairy-free chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the mashed sweet potato, almond butter, and maple syrup until smooth.
  3. Add the cocoa powder, oat flour, vanilla extract, baking soda, and salt. Mix until a thick batter forms.
  4. Fold in the chocolate chips if using.
  5. Spread the batter evenly into the prepared pan.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the brownies to cool completely in the pan before slicing.
