Ingredients

  • 4 medium-sized Russet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the potatoes and pat them dry. Using a sharp knife, make thin slices across each potato, being careful not to cut all the way through.
  3. In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Brush the mixture generously over the potatoes, making sure to get it between the slices.
  4. Place the potatoes on a baking sheet and bake for 40-45 minutes until crispy and golden brown.
  5. Remove the potatoes from the oven and sprinkle shredded cheddar cheese over each one. Bake for an additional 5-10 minutes until the cheese is melted and bubbly.
  6. Garnish with fresh parsley before serving, if desired.
