Preheat your oven to 425°F (220°C).
Wash the potatoes and pat them dry. Using a sharp knife, make thin slices across each potato, being careful not to cut all the way through.
In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Brush the mixture generously over the potatoes, making sure to get it between the slices.
Place the potatoes on a baking sheet and bake for 40-45 minutes until crispy and golden brown.
Remove the potatoes from the oven and sprinkle shredded cheddar cheese over each one. Bake for an additional 5-10 minutes until the cheese is melted and bubbly.
Garnish with fresh parsley before serving, if desired.
