Ingredients

  • 8 oz noodles (lo mein, ramen, or spaghetti)
  • 2 boneless, skinless chicken breasts, sliced
  • 1 tbsp vegetable oil
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 cup broccoli florets
  • 1/2 cup sliced bell peppers
  • 1/4 cup shredded carrots
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • Sesame seeds & green onions for garnish

Instructions

  1. Cook the noodles according to package instructions, then drain and set aside.
  2. In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make the teriyaki sauce.
  3. Heat vegetable oil in a large pan over medium-high heat. Add chicken and cook until golden brown.
  4. Add broccoli, bell peppers, and carrots, stirring for 3-4 minutes until slightly tender.
  5. Pour in the teriyaki sauce and mix well. Add the cornstarch slurry to thicken the sauce.
  6. Toss in the cooked noodles, stirring until everything is evenly coated.
  7. Garnish with sesame seeds and chopped green onions. Serve hot and enjoy!
