Ingredients

  • 4 medium russet potatoes, peeled and diced
  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine potatoes, onion, red bell pepper, olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss until well coated.
  3. Spread the potato mixture evenly on the prepared baking sheet.
  4. Bake in the preheated oven for 25-30 minutes, stirring halfway through, until the potatoes are golden and crispy.
  5. Remove from the oven and garnish with fresh parsley, if desired. Serve immediately.
