In a large skillet, heat sesame oil over medium heat.
Add ground pork or turkey and cook until browned, breaking it up as it cooks.
Add onion and garlic, cooking for 2-3 minutes until fragrant.
Stir in cabbage and carrots, cooking until softened, about 5 minutes.
Add soy sauce, ground ginger, black pepper, and red pepper flakes if using. Stir well.
Cook for another 2-3 minutes until flavors meld together.
Remove from heat, garnish with green onions and sesame seeds, and serve hot.
